I Suck at Baking Meringue Cookies


So, I decided to make a meringue frosting for a cake.  I was scared shitless about making this frosting  because I was trying to have an end result of suspiro (Dominican cake frosting, yes I am half Dominican).  This deals with making a syrup out of boiling water and sugar.  Now a couple of years ago, my sis and I attempted to do this.  We ended up with burnt sugar that came out looking like melted plastic!!!! Then the second try, the sugar didn't dissolve all the way so you were able to taste the crunch of sugar in the frosting.  Total Fail.

Fast forward to yesterday, I attempted again by myself.  I was bored and in the baking mood. I made the frosting (and may I add that my syrup came out perfect!).  The frosting was good besides not being too fluffy.  I was happy with it though.  BUT, I made a ton... the recipe I used must have been used to frost a 3 tier cake because I had a huge bowl!  So today I decided to make meringue cookies out of the leftover.. well, FAIL.

I guess since it wasn't fluffy to begin with, it was hard to make the peak on them.  They ended up flattening out as I was piping them out... then they started to spread in the oven.  I was on the phone with my sister and was laughing telling her my meringue cookies look like mini pancakes!!!

But being optimistic, I was like "well, at least I was able to salvage some of the frosting and make cookies."  Then I go to take them off the foil.  Now before you go yelling at me, I knew I should have used wax paper, but I didn't have any.  The next best thing I had was NON STICK Aluminium foil.  I figured since it was non-stick, it shouldn't be a problem.  WRONG....it stuck, soooo bad that I had to throw the whole thing out.

HAHAHHAHA... my sister was cracking up on the phone.

So yeah, I am not going to bother making these ever again.  I'll leave it to the professionals.
As for tonight, I have hung up my Martha Stewart hat.

What what!


  • I get such joy when Finding Nemo is on!!!  I always tell myself during tough times "Just keep swimming, Just keep swimming".  Trust me, it works! 
  • This chick at the car dealership today thought she was someone else, twice.  The guy comes out and says a name and she jumps up and says yes that's me.  The guy said the name again and she again replied yes.  Then he said I spoke to a male  before, then she asks for the name again and that's when she says "oh  no that's not me".  What the heck?  Humans are weird.
  • What the heck do you do with washi tape?? I have seen that stuff all over blog world, but have no idea what you actually use it for?  
  • Why haven't they made a Finding Nemo 2 yet? Seriously.
  • I just picked hubs birthday present... I am excited to give it to him! 
  • Hubs is going to be 30 on Friday!  And I will be having a party for him on Saturday.... so excited.
  • Any of you have a good appetizer recipes? Please share!
  • About 10 mins ago I thought of something to add to this random post, and I completely forgot.  All I know is that it was good.  le sigh
  • The movie "Jumping the Broom" is pretty funny
  • I am loving the show called Chicago Fire.  Anyone else watch?  Severide is HOT!!! He can come put my fire out anytime.

It looks like today in Jersey, it is going to be beautiful out, thank goodness because I have about  a zillion errands to run!

My life at the moment

Do you ever stop what you are doing, look around and say to yourself "I am so lucky to be on this earth."?

You should.  I can guarantee that it will make you appreciate life 100% more.

Life can be crazy at times.  But those times are the ones I cherish the most.  They remind me that I am alive and well.

So in this crazy time in my life, this is what's going on....

  • Apparently, I'm Mrs. Interviewer as tomorrow I will have ANOTHER interview for the same company.  This will be #6.  Go me!
  • Today I had dinner with  my awesome MonaVie business partners.  It was a ladies only dinner and  boy did we laugh our asses off.  
  • I ate at Mt. Fuji hibachi restaurant and our chef has cooked for Cake Boss himself, Buddy.  How freaking cool is that?
  • I walked 4 miles in 20 degree weather.... yes, it was freezing.  
  • Sadie loves cuddling next to me as soon as the hubs leaves the bed in the morning.  She takes his spot every time.
  • I can not for the life of me type on the touchscreen on my phone.  It is just annoying when you first start using it. 
  • But I love my new phone... so hubs, don't start yelling at me about me not liking the touchscreen.
  • I have some major cleaning up to do in my blog reader.. seems like a lot of bloggers just do link-ups all the time.  I miss original life blog content in the blog world.
  • I am over WINTER... Do you hear that Winter, I'm over you along with many other people... so can you just go and hibernate so Spring can come out and play? Kay?  Thanks
  • I am obsessed with PG Tips tea... it is so good and reminds me of the time when I lived in England.

Movie night with the bestie

Happy Tuesday all!

I just got back in from having an impromptu movie night with one of my bestie's, Raff.  You may remember her from this post where I talk about the bride to be!!!

Well, tonight I drove up to her place for movie night.  When she texted me, she said come at 4:30 so we can grab a quick bite to eat before.  That made me think we were going out, but when I walked into her place, she was cooking!!!!  And it was DELISH!  Love my friends that cook good food.  Then we went to see Safe Haven.  I haven't read the book, but she did.  I liked the movie and Josh Duhamel is pretty hot as well. ;)
I would recommend it... makes a good movie to see with your girlfriends for a night out.
Raff said the book was much better, which I am not surprised.  I may add it to my list of books to read just to get the whole story.

And we also got to talk some wedding stuff which is always fun!  I am so excited for her and loving all the ideas she has in mind.  This wedding is going to be a blasty blast!

So far so good

Remember when I talked about the 4th interview I had last week for this one company that I would really LOVE to work for... well this chick has yet again ANOTHER interview with 2 more people from the company on Thursday.  This makes it the 5th interview in total, 2nd in person.  Wow... longest interview process ever, but I must be good since I keep making on each new level.  Here's to hoping it goes well on Thursday!

Anyhoo, how was your weekend?
Mine was good.  Hubs and I did some shopping yesterday at Bed, Bath and Beyond yesterday.  All I went in there for was to buy a K Cup holder that goes under our Keurig.  That was all I wanted to get.  I had a coupon AND money left on a gift card.  About 40 minutes later, I walked out there with a charge of $80 which included the K cup holder, new shower curtain, shower liner, welcome mat, new bath mat, soap dispenser, and 2 boxes of k cups flavors.
There goes buying ONE thing. That store just sucks you in.  And some of the stuff I bought was in the clearance section!  But, our bathroom got a new look and I finally have my K cup holder so the 10 boxes don't fall on my head anymore since the only place I had room to store was on the top shelf which clearly being fun sized means I can't reach it which then ends up with the boxes falling all over the kitchen floor when I try to grab them.

It's tough being fun sized!

The people of Starbucks

So here I am sitting at Starbucks trying to get some blog inspiration.  Hubs mentioned that my post yesterday was a debby downer one so I am on a mission to make you laugh today.

This is what I see at Starbucks today:

Two older ladies who are chatting away on two chairs on the opposite side of the store.  All of a sudden, one lady gets up and I cringe.  This lady is probably in her late 50s.  She has gray boots, gray tights  white shirt that DOES NOT go past her butt, a leopard print scarf and leopard print fur coat.
But here is the best part... want to know what else is leopard print???
You do?!?! Great, I'll tell you...

Leopard print underwear!  Which is CLEARLY visible through her gray tights.

Isn't it a rule that if you are going to wear tights as pants that your shirt should at least cover your butt??!?!?

Apparently she doesn't know about that rule.

I wonder if her friend will tell her that her underwear is visible to everyone??

Currently

Currently...

  • I am high fiving myself for doing the 8 slow cooker freezer meals so today all I had to do was dump the stuff in the crockpot and walk away.
  • Spent HOURS searching and applying for jobs on the internet.... and I don't even feel relieved. 
  • Almost had mini anxiety attack by myself at home in the middle of the job search... it is just so frustrating and I am not  very good at being patient.
  • Had another phone interview for that one job... this is the 4th interview with same company.. and he told me he wants me to talk to some other people as well and come in and do a presentation for them.  This is good news but I am just wondering how much longer this process will take.
  • I want to tell the above job just to hire me already... seriously, I am up for the challenge. Just hire me so I don't get full blown anxiety attacks. PLEASE FOR THE LOVE OF CHOCOLATE.
  • I got dressed today. 
  • My dog just sleeps all day. ALL DAY. I want her life, badly.
  • For the last hour, I have contemplated opening up the bottle of wine in the fridge, but didn't because I don't want to fill out applications drunk.  Yeah, it's that bad people. 
  • I just want to cry. 
  • It's supppose to snow again here in Jersey tonight
  • Dear Spring, I want you to be here.. like yesterday
  • I really wished all the people at my last job, including people I didn't even work directly with, that were surprised I wasn't staying with the company would have really  begged them to keep me. I was damn good at my job and loved it. I would have totally moved with the company to SC too.  
  • It makes me happy that a lot of people at my last job knew about my work ethic and applauded me. Go me?
  • This post was suppose to be funny... and it totally didn't turn out that way.

I just became WONDER HOUSEWIFE WOMAN!!

It's not Wonder Woman... it's Wonder Housewife Woman...

I did this..



FIRST, THEY LIE... it took me 2 hours, not 1.  But then again, I wasn't rushing.

I did each recipe at once just to make sure I didn't screw up.  What's awesome is that the website even provides you with the shopping list.  EASY PEASY. My kind of thing.

I only kept sane throughout this process by doing each recipe at once and laying all ingredients out  before I started. 

And this was the final result after 2 hours!

Thank goodness for the person who invented gallon size freezer bags! 

Currently, I have ribs in the slow cooker.  I was just talking to hubs and he was asking me how it went... I was like "great, the ribs are in the slow cooker now", hubs: "We're having ribs?!?!?"

I think the hubs is excited.  We don't ever have ribs because I have never made ribs.  Let's pray to the cooking gods that this recipe comes out good so hubs bubble doesn't burst when he comes home to crappy tasting ribs.

Guess I'm a housewife now

So now that I am unemployed and back from vacation, I will assume my title is changed to "Housewife" for the time being.

Not sure how I feel about that since it doesn't include "Real" in front of it as the retarded TV series showcases as housewives who are super rich and shop all day long.

But, it also feels good to be home and get myself to refocus. And to focus on cleaning this apt up because as some of you know, when you work full time, you clean the house so it can be pass with a C/B (depending on your mood)... .but as a housewife, I think that your job is to have your place with a grade of A because to me, that's your job as a housewife.

So, on my agenda today was watch a little TV in the morning (let's face it, I might as well splurge in this luxury before it's gone), clean the bathroom, unpack suitcases, and scan photos for our friends who need it for their children's engagement party.

I am proud to say that as of 1:36pm, I have caught up on some of my Ellen shows that I had on the DVR, cleaned the bathroom from top to bottom, unpacked suitcases and as a bonus: rearrange some of our drawers so hubs has an extra drawer which he really needed, and I am about to start on the scanning of the photos.  That will start after this blog post and I make myself something to eat.

I am feeling pretty good about the day so far.
For the rest of this week, I want to focus on cleaning one room at a time.  This will allow time for me in the morning to job search as well.  And I think tonight I will raid Pinterest and start making some of the recipes I have pinned since I have time now to really work on them.  Tomorrow may include a shopping trip to the food store as well.

All in all, so far, I am OK with this being unemployed business.  But do you want to know who is LOVING this unemployment business?  Sadie... she is so content with sleeping on the bed till late and having me around to play fetch with her during the day and not being in the crate.

But let's get one thing straight, sometimes we hate each other as well.  We're siblings and we fight.  Yes, we fight at an adult age.  But all in all, she is awesome and I have no idea how I would live my life without her.  And she has blessed me with a niece and nephew, so WINNING!

My feet haven't fallen off yet

So I'm on vacation in good ole Orlando, FL.

Which means = Disney parks

On Monday, we went to 3 parks.  Yes 3 as in all in one day.  From 10am till 11pm we were walking, running, riding coasters and eating.  It was EXHAUSTING.  But we had such a blast and made it through the day.  How we made it, I have no idea.  I wasn't even sure I was going to make it through the door when we got back to the town home.  I would have been perfectly fine sleeping in the car at that point. My feet didn't know how to function anymore.  The whole concept of putting one foot forward then the other one and repeat was so foreign to my mind.  But I made it to our room and on the bed.  And I didn't wake up till about 11am the next day.  And guess what?  I still felt like crap. My legs had no idea what hit them!  Here we are, two days later and my legs still hurt.  Ugh.

But, want to know what's more annoying?  A crowd of about 25 European 15 years old in Disney chanting ALL THE EFFIN TIME.  I have learned that the thing to do for Europeans is to fly your child and her closest 25 friends to Disney to celebrate a "sweet 15".  They had a private tour guide, fast passes for all attractions and were obnoxious.  They chanted ALL THE TIME, you can hear them from the other side of the park.  They chanted while waiting on lines.  That got old very fast. I was so happy when the cast member (employee) came over and told them there was  no chanting on lines.  Thank God but I couldn't even hear myself think.  And to the parents of these 15 year olds... how in the hell did you think it was OK to spend at least $5,000 for EACH CHILD to come to Disney as VIP guests for a freaking sweet 15 birthday celebration? How about giving them a party and donating the rest to a worthy cause? Seriously, 15 year olds don't need all that crap... that's how they become future reality stars for the show Real Housewives.  Have you seen that show? Trust me, you don't want your child on that show because they just look stupid.

OK, end rant.  I am going to finish my cup of coffee and savor this wonderful weather we are having here before we leave to the cold world of NJ tomorrow.

Bring the Popcorn to the Security Line

The funniest things you see is when you are on the dreaded security line that can either be quick or move slower than slugs.  Most of the time, it's the "slower than slugs" line.  But no worries, this is when the entertainment kicks in.  Let's call this

Things you see at the airport security line


  • The annoying business person with their bag that rolls and swivels in 50 million different ways who is talking on the cell phone about stock and bonds while reeking of cologne looking all "cool."
  • The first time traveler that has every document and forms of ID out and ready to hand over to the TSA guy while the TSA guy is telling them they only need boarding pass and ID, and NOT your birth certificate, marriage license, etc. 
  • The mother who is travelling with little kids who is giving her husband the look of death while screaming at her kids to stop running around.
  • The girl who is wearing 5 inch heels, sunglasses, a tight dress and an over sized handbag ready to walk to the red carpet... of a freaking airport.
  • The senior citizens who keep asking where their boarding pass is and if it's OK to bring in their 10 different bottles of medicine on their carry on while moving slow as turtles.
All I need is popcorn to enjoy the show.
