Blah

Today is one of those days when I feel just like BLAH....

Plus side, I am getting a lot done at work.

So, to make this post a bit more interesting besides by blah mood, I want to know if you have any good recipes for Salmon fillets?

I plan on making this for dinner tonight but have never cooked or even dealt with Salmon.

Any suggestions?

delicious with fresh lemon squeezed over the top, chopped fresh basil, dried oregano, fresh minced garlic, dried parsley and a dash of salt and pepper. Equally delcious (and much easier) is barbeque sauce, I wasn't sure what I thought of it when I first heard of using it on Salmon but my whole family tried it and loved it. Also easy and quick is an oil based ceasar or italian. Blackened seasoning is also delicious!

We buy fresh salmon (wild not farm raised) by the case and usually eat it once a week or once every other... Good luck!

blah blah blah!!! I totally am with you today! Monday's are lame.
Never cooked Salmon? That is a funny thing to hear someone say when I am living in Seattle. I don't eat fish...but apparently Salmon is all the rage here ;-)

I pulled my husband's salmon recipe (also posted on the board).

Baked Salmon

Preheat oven to 400 degrees

Start with a salmon filet (or other fish filet if you prefer). Spray baking dish with cooking spray. Dot salmon with butter (about 1 tsp, but I think he might use a bit more). Sprinkle with seasoned salt and dill. Pour 2-3 capfuls of lemon juice over the filet.

Bake for ~20 minutes. If the filet is really thick, bake an extra 5 minutes. If thin, bake 5 minutes less.

Fish is done when it flakes with a fork.
